It may not be what you choose for the species but how you present the paper. You can talk about any animal being endangered but it how it is endangered and how it got there and how it is being fixed.
The paper will have to deal with the whole subject not just the critter.

There are several one I can list off the top of my head would be the Whooping Crane Grus americana. This one is endangered as is working its population back up. But a good place to look would be the webpage for the Convention of International Trade in Endangered Species of Wild Fauna and Flora or (CITES)
This webpage will give you all the information you need and the different levels on how severe they are. This is an internationally reconized body so it will look good on your paper. And its been around since 1973 so its got creditials. Hope that helps
